Those looking for a good brunch spot now have a new option with Eve Cakes Coffee & Brunch at 423 W. 2nd Street.
The shop had its ribbon-cutting last Friday, and owner Evelyn Ramirez said she has been working toward her own shop for a long time.
“22 years ago, I had my first daughter, and I never wanted to leave her alone for long periods, so I started baking cakes and other desserts to stay with her,” Ramirez said. “Then, I had my second daughter, and after that, I started thinking about having my own place, and that was when I was still living in Mexico. I moved to Liberal seven years ago and got married, and he was always super supportive of my dream and did whatever he could to lift me up. When I came to Liberal, I started baking cakes and other desserts for people, which helped me start building a clientele. Once I started building those relationships and felt I had a solid enough base, that's when I started giving serious thought to opening my own place and actually looking at locations and everything else.”
After all that work, Ramirez said there is a lot of excitement about officially having the shop open.
“We were thinking about opening the place, and our location at 423 W. 2nd Street was perfect because it's close to Liberal High School, and we know a lot of students are hungry and looking for snacks. So as they're leaving school and going down the road, they'll see us and have not only a quiet spot to get some homework done, but also maybe have a snack or two before heading home,” Ramirez said. “That was one of my first thoughts when picking this location, but of course we want to see everyone from the community in here. We have chilaquiles with different fillings, multiple delicious different sandwiches on baguettes and ciabatta bread, and other good options for brunch and other meals, so it's a great menu. We really want everyone to come in and try what we've got, it's all really delicious, and we want everyone to enjoy it all, because it's a great menu. I feel like everyone will especially like our chilaquiles and crepe options, those are particularly good. ”
Eve Cakes Coffee & Brunch is open for brunch from 8 a.m. to 2 p.m. every weekday (except Tuesday, when the shop is closed), 9 a.m. to 3 p.m. Sundays, and the bakery is open from 5 to 10 p.m. for those orders.
Overall, Ramirez said, she is grateful for the support she has received for the shop so far.
“We really appreciate everyone who came out to the ribbon-cutting, I'm really thankful for everyone who was able to be there that day. We've been working on this for a long time, and we're ready to give this good food to people,” Ramirez said. “I'm really thankful for my family working with me in this. My husband has supported me every step of the way, and I'm happy to have my daughter and sister-in-law working here too. We couldn't be more excited to be part of Liberal!”
