Those looking for a delicious place for a meal now have a new option with Tacos Mi Pueblo at 405 E. Pancake Blvd.

Owner Melanie Rodriguez said she has been working toward her own truck for multiple years.

“I've lived in Liberal for about 10 years, and I'd worked at another food truck for nine years. I didn't necessarily work there with the intent to open up my own truck, but I did learn a lot from working on that truck,” Rodriguez said. “Then, finally, with God's guidance, I started on the path to my own food truck, and this is something I knew I wanted. I decided to open it up and put all my experience and trust in God into practice. There just came a moment a while ago when I realized I wanted to do something for myself and make my own path and prosper.”

Rodriguez said her menu is also pretty extensive.

“Tacos Mi Pueblo has a lot of menu items, the most important of which is the Steven Hamburger, which was inspired by my son who's on the autism spectrum, and it's very delicious,” Rodriguez said. “We also have pizzabirria, tacos gobernador and a wide variety of other Hispanic dishes for people to enjoy. Everything is fresh and made from scratch, and all of them are from my own recipes. That includes the food items and the drinks like the horchata, lemonade and other items.”

Overall, Rodriguez said, she is excited for her truck to be open to the community and is ready to serve everyone who stops by.

“My biggest satisfaction is seeing my customers coming and enjoying the food and leaving happy and full. The food is delicious and the service is great, and God has provided everything I've needed in order to make this work,” Rodriguez said. “I enjoy being in Liberal after living here so long already, so I feel blessed to be part of the community. I would welcome anyone and everyone in town to come and visit the truck, there is no way you will go away hungry afterward.”
